To parboil or Not to parboil?

Is it necessary to parboil vegetables, i.e. green beans and yellow squash before freezing them /

Blanching is recommended when freezing vegetables to inactivate enzymes that cause changes in quality when vegetables are frozen, such as changes to color and texture. Blanching is not required for safety in frozen foods.

If you don't want to blanch before freezing, you can try freezing a small amount of the vegetable without blanching and then thaw/cook and see if you are satisfied with the quality.
