Something is eating my sunflower plants

Is there anything I can do to deter it? Also, why did 1 of the three saplings turn into one sunflower flower and the other two turned into multiple branches of flower heads?

Hello,

A lot of insects and pests will eat the foliage of sunflower plants. This can cause unsightly appearance of the leaves, however you can treat them with an insecticide. An organic one may be a good choice.
