Prune espalier pear tree

The tree is in its third year after planting. First and 2nd year produced 2-3 pears; there were more blooms, but they dropped off. This season there were 15-20 blooms that began to form pears but they all dropped off before they were big enough to trim. There was quite a bit of new growth this summer which I recently cut back (August). Should I prune again this winter or next early spring, if so how severely should I prune?
