I have 1 zucchini plant and it’s producing 3 different color fruits, yellow, orange and green. How is this possible? And is it safe to eat and mix them to make bread?

Yes, they should be fine to eat. If you saved seeds or have mislabeled seeds, that's probably the reason for the different colors. There are actually several varieties of zukes that have yellow fruit (from Johnny's Seeds: https://www.johnnyseeds.com/search/?q=yellow+zucchini&lang=en_US)
