Too much pressure
I processed pints of chicken today and was horrified to realize about halfway through the processing time, I was using the 15 lb weight instead of 10 lb. I kept going though, rather than stop and start again. How will this affect my product?

You should be fine. Your chicken might be softer or mushier but it is safe. If you had bones in it, they will be softer as well.
