Thanks for contacting Ask and Expert.

Food preservation recipes from reliable resources recommend you start with top quality ingredients for best quality.

Green beans should be blanched to preserve the quality before they are frozen. Freezing will further change some of the cell structure, causing some texture changes when they thaw. If you try to can Dilly Beans from frozen beans it is highly likely that you will not get the product that you are expecting. The product won't have that firm bite.

Try using your green beans in salads, soups, stir-fry, skillet meals, casseroles, or in a quiche. See Foodhero.org for easy, inexpensive recipes with green beans: https://foodhero.org/recipes/categories/1289
