My yellow delicious apples have gray and black skin. What must I do to improve the quality of the apples, including pruning, pesticide applications through the year, etc.

Hello. Likely you have sooty blotch and fly speck on the apples. Google up some pictures of these fruit diseases and see if what your fruit has matches that. Both those fruit skin diseases are caused by fungi under conditions of high humidity. There are sprays that can be applied. If you're not a commercial orchardist, then check garden store offerings for what will control the problem. From a pruning standpoint, opening up the tree so that more air moves through the tree will help.
