Canning Mexican carrots with jalapenos?

Hi! Is there an approved water bath or pressure canning method for making zanahorias en escabeche? Or is the best technique using a refrigerator pickle method?

Thanks for contacting “Ask the Expert.” Approved recipes exist for mixed vegetable mixtures that contain carrots processed in either a water bath canner or pressure canner. You can access those recipes at ……

Fermented versions of escabeche are not available at this time, pending further research regarding food safety. In the end, your best option may be to use your own recipe and store the final product in the refrigerator.
