What do you mean pick tomatoes when they first change color and ripen inside? You need to keep on vine to fully ripen to get full flavor.

Hi- home gardeners often see an increase in fruit pest and disease problems from the time fruits reach mature size through the color change/ripening process. Additionally, fruit cracking increases when plants take up water after irrigation or thunderstorms during the time that fruit skins harden and are less supple. These problems may be worse with heirloom cultivars.

We can greatly increase the usable harvest by harvesting at first color change and ripening fruits on a kitchen counter. Give it a try. If you are growing typical "home garden" cultivars (i.e., not "shipping" cultivars) we don't think you'll notice a texture or flavor difference between fruits ripened indoors and fruits ripened on the vine.
