frozen pumpkin- can i eat it?
My pumpkin just froze. It is now very soft. Is it o.k. to cook it & freeze it for further use?

Once the pumpkin froze it would need to have thawed and remained under 41 degrees for safety. If it stayed under refrigeration temperatures, yes you may cook it or re-freeze. I am making the assumption the pumpkin froze before you had a chance to cut it/process it. Since it froze first, the consistency will be changed and will be more watery than usual.
