Can I waterbath can this recipe

Unfortunately, the Peperonata recipe that you forwarded can not be safely canned in a water bath canner, due to the low acid content of the peppers and lack of high acid ingredients (standardized vinegar or lemon juice) to acidify the product to a safe pH of 4.6 or below. Processing the peperonata in a water bath canner introduces a risk for botulism. This product would best be stored in the refrigerator.
