Is it safe to can plain elderberry juice in a water bath canner, using sp 50-455 as a guide? Is it safe to use them to make and can Berry syrup using sp 50-633? Are there other references I should consider when canning elderberries?

Elderberries apparently have some interesting characteristics and the pH level differs substantially depending on growing region. The good news? Elderberries grown in Oregon have a pH range that is more typical of blackberries. Based on all of this, Oregon-grown elderberries would be considered equivalent in safety to blackberries.
Berry syrup instructions from SP 50-632 (https://extension.oregonstate.edu/sites/default/files/documents/8836/sp50632makingberrysyrupsathome.pdf) can be used for Oregon elderberries, and SP 50-455 (https://extension.oregonstate.edu/sites/default/files/documents/8836/sp50455preservingfruitjuicesapplecider_0.pdf) can be be used for juices.
