Thank you so much for reaching out to us! After a lot of digging here is what we figured out.

Elderberries apparently have some interesting characteristics and the pH level differs substantially depending on growing region. The good news? Elderberries grown in Oregon have a pH range that is more typical of blackberries. Based on all of this, Oregon-grown elderberries would be considered equivalent in safety to blackberries.

Berry syrup instructions from SP 50-632 (https://extension.oregonstate.edu/sites/default/files/documents/8836/sp50632makingberrysyrupsathome.pdf) can be used for Oregon elderberries, and SP 50-455 (https://extension.oregonstate.edu/sites/default/files/documents/8836/sp50455preservingfruitjuicesapplecider_0.pdf) can be be used for juices. SP 50-536 has some great information on wild berries overall (https://extension.oregonstate.edu/sites/default/files/documents/8836/sp50536wildberriesandfruits.pdf).
