i usually dry fry and freeze chanterelles. It's time consuming but the results are good. I have a large dehydrator. If I dehydrate chanterelles will they retain their flavor?

Drying mushrooms is a great option for preserving mushrooms. Recommended to slice to ½” thick and dry at 120F until crisp.
