Rhubarb Prepartion for Winter

I have 3 beautiful Victoria Rhubarb plants that have been in the ground/a slightly raised bed on the south side of your home in the West Ridge of Eagle Crest. How do I prepare them for winter? They still have large stalks and leaves. Do I remove all stalks? and then prep with compost/manure/straw? Since I'm new to Central Oregon, I need to learn the proper way to care for them. I love Rhubarb and am so happy that it is growing well here. Just love it! I look forward to hearing from you at your earliest convenience.

Hello, wait until the stalks have been softened by freezing temperatures then remove and discard them and the leaves. Follow that with covering the root and crown with 3-4" of compost or mulch for the winter.
