Is an aluminum steam canner as food safe as a water bath canner for preserving pickles,jams? Would the steam canner be safe for fruits (peaches, pears)?

If you're asking if you should use pressure canning or open water bath canning for high acid foods like pickles, jams, and fruits like peaches and pears, you can use either as long as you follow the guidelines from the National Center for Home Food Preservation or an OhioLine factsheet. You may obtain higher quality products using a boiling water bath.

However for low acid foods, such as meats, vegetables, and soups, you must use a pressure canner. Again, following recipes from the above sources will provide instructions.

There is a product called an aluminum steam canner. It uses much less water - produces steam to process foods. Is it safe for high acid foods?
