Is there a recipe for mango jam or marmalade that that is tested and safe ?

Good question. We have not seen a ripe mango jam or marmalade recipe that we know has been tested by a food lab.
One of the reasons must be that mangoes become less acidic as they ripen. It might require so much additional acidification (probably lemon juice) that the final product would not be desirable.
You could cook a thickened mango product and either refrigerate or freeze it instead.
