cooked fruit okay for freezer jam?
I recently found last year's frozen blueberries in my freezer. Not wanting them to go waste, I thought to make freezer jam with them. Since the fruit is a year old (it was washed before putting in the freezer bags), I wanted to cook it first. Will that work? I assume I'd need to drain most of the liquid, or the jam will get too runny.
Thanks for contacting Ask the Expert. As freezer jam is stored in the freezer and not on the shelf, you could cook the blueberries ahead of time, but it's not necessary. You can drain out some of the liquid ahead of time, but keep in mind that the recipe is based upon a certain amount of liquid being available in order to insure gelling of the product.
