Making shrubs

when making shrubs/fruit vinegar, is it okay to use bruised or over ripe fruits since you just getting the juice?

Yes you can use overripe fruits. I would be careful to cut off the bruised and damaged parts and would not recommend moldy fruits. Thanks for using Ask an Expert Nellie Oehler
