This would be difficult to say without understanding how large the plants were beforehand and without seeing what damage has been done by the beetles already.

The adults are eating the foliage---and probably the stems---but will not consume the roots or developing 'spuds'. That feeding damage will not affect the 'spud' tissues; they will be safe to eat---peel and all.

The plants will probably use reserves stored in the roots and spuds to put on new top growth---so there is hope, at least. Continue to water and weed and see what happens next.
