Water siphoning

I used my new Carey electric pressure canner to can 3 quarts of collard greens last night. All 3 jars lost about 1 inch of water and some of the greens are below the water. I've read they are safe if the lids sealed, but that I should use them up first. Well, I can't figure out how soon I should use them. I want to label them with a "use by" date, but don't understand how long these jars are going to be safe. How many months will they be safe to eat?
