Salt peter for brining homemade corned beef?

Hi! It's Barb Randall at the LO Review. I came across Alton Brown's recipe for home corned beef. One of the ingredients is salt peter, which is used to form sodium nitrate, which becomes sodium nitrite to help preserve the meat and arrest bacterial growth. It also keeps the color of the beef red I am told. Is there a substitute for salt peter? Can you use beet juice or celery juice instead? Barb 503-887-3949
