Hi there. Do you know the name of this grass? Any idea how big it'll get? I want to move it to another garden--when is the best time to do so? Any other tips?

There is no way to identify this ornamental grass by you photos. Many grasses look similar when they are dormant. Below is a link to an article that has pictorials and information in many grasses grown in MN. Transplanting of grasses can occur either in spring or fall. In the spring wait until the plant has established regrowth (new green sprouts) prior to digging it up. https://friendsofeloisebutler.o rg/pages/seasonal/ornamentalgrass

Thanks, Amy for the info. I already learned something!
Here are pics of the same grasses before winter, before dormancy.
Can you identify them from these images, please?

It looks like some type of Switch Grass.
