when to freeze recipe for make-ahead convenience
Hello! I have a wonderful stuffed bagel recipe that involves wrapping a filling in freshly made dough, then boiling the stuffed pocket, then baking them. I'd like to be able to make them ahead and freeze them. Would I freeze them before boiling, after boiling, or after fully cooking them? (Presumably I'd pick up the cooking process, or warm the already cooked versions, after thawing.)

I do not know what you are filling your bagels with so I will guess it is cream cheese. I would recommend that you boil your bagels and then bake them. Freeze the bagels that you do not enjoy since your kitchen will smell fantastic from the baked bagels. Freeze in an airtight container or wrap. You want to keep the air out.
