Nutrient Dense Vegetables

How do you make sure you are growing nutrient dense vegetables? Can you grow them in Peat Moss?

A nutrient dense vegetable is one that (1) has all of the 16 elements that plants need to grow and (2) provide them to our diets in adequate amounts to meet our nutritional needs.
