Can one prepare(Grind,add cure and seasoning,Stuff casings)and then place in refrigerator for 3-5 days.? Directions call for grinding meat, adding cure and placing in refrigerator for 3-5 days and then adding seasoning, mixing and then stuffing casings. If it is not good to mix it all and stuff casings at the same time can you answer why.
It certainly is not a safety issue to add the spices at the time you add the cure. I do it all the time. I think that some people might prefer to add the seasonings later because they can intensify or change the flavor if added during the cure but that is just an assumption. It certainly is not a safety issue so go ahead and add them.
