Can I safely make apple sauce out of apples that have damage from coddling moth or other apple worms? I wash the apples and only use the undamaged portions of the apples. I'm concerned about possible Patulin contamination.

Patulin is always a concern when there is damage to the structure of the fruit. Generally is damage is external, that is one thing, but when it is internal, we generally advise against using it.
