When should I split my elephant ear plant?

I have an elephant ear on my patio. In the Fall I cut off all the leaves and bring the pot into my basement. I put it in a large cardboard box and water it once a month. Mother’s Day weekend I bring it back out to the patio. It grew a TON this summer, and needs some “shoots” pulled and put in new pots. Do I do that now, before Winter, or wait until Spring?

If you plan to winter the plant in its pot, separate the offsets from the primary bulb in the spring.
