There is a recipe for making fig jam without added pectin on the National Center For Food Preservation website. https://nchfp.uga.edu/how/can_07/fig_jam.html.

The Ball Blue Book also has a recipe for fig jam you might like to try. You might also try googling some of the pectin companies like MCP and Sure-jel. They have recipes on their website as well.

If you have other food preservation questions you might like to call the OSU Food Preservation/safety hotline open M-F from 9 am-4pm thru Mid October. The number is 1-800-354-7319. Certified Master Food Preservers are available to answer your questions.
