Yes, you can can sea bass. You would follow the directions for canning salmon, trout, steelhead and other fish. There are directions on the OSU Extension Food Preservation webpage for canning fish - here is the link .https://catalog.extension.oregonstate.edu/pnw194

All fish is canned in pints or half-pints for 100 minutes in a pressure canner at 11 pounds pressure (dial gauge) or 10 pounds pressure (weighted gauge) at altitudes up to 1,000 feet.
