Canned pesto from sprouts

Asked August 8, 2018, 11:00 AM EDT

Hello! I'm interested in making and canning some pesto made out of basil sprouts. Do I need to can it any differently than pesto from leaves? Thank you! Rosalie

Pesto is not recommended to be home canned (by National Center of Home Food preservation by USDA). Mostly because it is low acid food plus applying heat to pesto will cause flavor, color, and taste changes. However, you can freeze pesto in a freezer-friendly container or refrigerate it for 3-5 days. Thank you.
