Measuring Fat Percentage in Ground Pork
Hello! We recently had our own hog slaughtered but, have been unable to find information about the percentage of fat content in our ground pork. This information would be very useful, since we intend to make and stuff sausage from the ground pork and we assume we need to add extra fat to the meat. (At least that has been our experience with store-bought ground pork). Any ideas?

If you cook a known weigh of the ground pork (I.e. 1 lb) and separate and weigh the fat off from the fat and water that you can remove after cooking, it will give you a rough estimate. You could also compare this to the amount of fat you get from a known blend of ground meat. A labeled pound of 80/20 ground beef will have 20% fat.
You will likely have to add fat to your pork for sausage making.
