Processing fruit shrubs

I see a lot of info about making fruit shrubs to add to beverages, but they all are for keeping it in the frig for several months. Can you water bath a shrub, and if so, how long? Would love to give some for Christmas gifts but want to take advantage of the fresh fruits now!

We have not seen any instructions from a reliable source for processing infused vinegars. It may be that processing the vinegar / juice combination detracts from the quality and fresh fruit flavors.

Previously frozen fruits release juice and infuse the vinegars more quickly and efficiently, so freezing the fruit now and making the vinegars closer to the holidays would work.
