Undercooked smoked turkey

Asked May 8, 2018, 2:08 PM EDT

We were smoking turkey hindquarters, soaked in salt for 8 hours then smoked at a low heat for several hours, we got busy and forgot it until bed time. At that time the turkey was not cook thru. We then put it back on the smoker (the next morning) again on a low heat, after 8 to 10 hours still was not cooked through. We put it in the oven and cooked it to 180 degrees. Is this safe to eat?

Your turkey hind quarters were in the danger zone too long so it would be risky to eat. Even though you heated it at the end there are some bacteria that produce heat resistant toxins that can cause food borne illness. If I were you I wouldn't risk getting sick and try smoking some more correctly.
