I harvested kidney beans when the pods were dried. How can I be sure they are safe to use?

Thanks for contacting us. Beans must be thoroughly dried before storing in order to avoid mold of rot. Depending on how many you are dealing with, they may be spread out on several layers of newspaper or on drying screens. Soft the chucked beans and allow them to dry several weeks in a warm, dark area with plenty of fresh ventilation. Test them by trying to break one in half.

You may then store them in an airtight container, preferably in a cool, dark area. If you do happen to notice a foul smell or mold, discard them.
