canning roasted tomatoes
I recently roasted tomatoes which were coated in olive oil and dried spices. I pureed them and canned them in a hot water bath for 30 minutes (sterilized jars). Should I have added vinegar. What do I do now that they are canned?

This is difficult to say. There are many variables here. How much oil did you put on the product. What was the pH of the tomatoes. I can not recommend that you eat this product.
