winterize vegetable garden plot with peat moss?

I have half a large bag of peat moss left, after creating several "square foot garden" 4x4 raised beds. Can I use the rest like straw to winterize my spring planting beds?

You could certainly use the remaining bag of peat moss in your raised beds. We would recommend mixing it in to the soil, rather than using it as a top dressing. It is so light that it might just blow away if you put it on top. It could also be reserved for container planting mixes or seed starting.
