Vitamins in Vegetables, dry or frozen
(I believe I asked this question before but somehow I did not receive the answer)
I grow vegetables in my backyard and every year we end up with extras like Cilantro, Basil and Parsley. Is it better to dry them in the sun or freeze them? Which one preserve the vitamins better? Cost and labor is not important.
Herbs should be washed in cold water and spread in a single layer to air dry, before preserving them.
