Roots of Hostas & Rhubarb have been eaten over winter

What would do that & how do I prevent it next winter?

Thank you for the question. From the photos, it's hard to identify a problem. It looks like there is plenty of growth on the hosta with maybe a few nipped off sprouts that could be due to a rabbit. The rhubarb looks like it's growing normally in the early spring. Perhaps the center of the plant had died out due to age but I can't see a problem.
