Freezing fingerling potatoes

Asked April 12, 2017, 12:24 PM EDT

I have purchased fingerling potatoes frozen (1 LB.). When ready to use I followed recommended stove-top on pkg. Saute in 1 T olive oil for 6 minutes then cover and cook another 6 minutes. The spices that were in the potatoes gave an excellent taste. I know one was thyme. I would like to know if I can freeze these potatoes myself and keep in freezer until ready to use following cook directions what I used on my package of frozen fingerling. Thank you. Kathy Mazurek

Yes they can, but the quality depends on a number of factors. Please review this from Penn State Exrension. http://extension.psu.edu/food/preservation/news/2012/potatoes-fresh-and-frozen
