pruning fruit trees
Should we prune our bartlett pear tree and our apple tree every year, or every two years?

Generally, fruit trees should be pruned once a year. The exception is anything espaliered--those should be pruned once in the dormant season, and multiple times during the growing season.
As always, consult Brickell and Joyce, The American Horticultural Society Pruning & Training for specific information. (And yes, that really is the name of the book. Readily available through your library.)
