I am not clear on the context of your question! I need more information prior to answering the question. Are referring to food preservation or home food preparation?

I will be on the lookout for your response via internet or telephone. The Clermont County Extension office can be reached at 513-732-7070.

I'm referring to measuring foods for portioning. Should I consider the weight before the food is cooked or after? For instance, for 6 ounces of chicken, should a portion be 6 ounces of raw or 6 ounces of cooked?

The best practice would be to measure the food after cooking. Think about rice...if measured prior to cooking you would eat three portions. In addition, the higher fat protein foods would loose fat. Definitely, measure after cooking.
