Cream cheese cookies and refrigeration
I made cookies with cream cheese in the batter, and baked in. I haven't been able to find information on whether or not they need to be refrigerated. All I can find is information on frosting. I have them in the fridge, but is it necessary?
These cookies would be very low risk if left at room temperature. The flour and sugar in the recipe will absorb any moisture that would allow bacterial growth possible from the little protein in the cream cheese.The fat in the cheese has some potential to become rancid, but no more than it would if butter had been the fat source for the cookies.
They should be ok at room temperature.
Alternatively, freezing is a better way to keep cookies fresh as opposed to refrigeration. Make certain they are in sealed containers so they don't absorb moisture if you do freeze them.
