There is a cranberry salsa developed for canning and the recipe is available at http://nchfp.uga.edu/how/can_salsa/spicy_cranberry_salsa.html. To determine a processing time, your recipe would need to be tested in a food science lab. However, something to consider is that the recipe you shared is a fresh product. It would no longer be a fresh tasting product after the cooking step needed for preparation and heat treatment of canning. Think of the difference between fresh cranberries and cooked cranberries - their flavors are very different. A reasonable option would be to freeze your salsa. Freezing preserves the fresh taste - which is probably one of the reasons you like this salsa. Hope that helps. Feel free to contact me directly at powers@wsu.edu if you have additional questions.
