Planting in the fall

I would like to plant a viburnum x burkwoodi, an Ivory Silk Lilac tree and a cherry laurel otto (dwarf). How late can I plant in the northern Ky area and can I sow grass seed this fall? My lawn has been overtaken with crabgrass this summer and I would like to get rid of it but will need to sow grass as the grass is gone where the crabgrass grew. What kind of grass is best to sow in the fall? Thanks for your help.
