I would like to can some homemade meat sauce in half pint jars. Can you please give me some guidance? I have a pressure canner but not directions. I need to know how muck water to put in the canner and how long to process for half pints.
Thank you for your question. Not knowing your recipe, I cannot give you any recommendations for safely canning it in any size jar.
However there is a Spaghetti Sauce with Meat recipe available from The National Center for Home Food Preservation.
This recipe gives directions for canning pints and quarts. If you use half-pint jars, you would follow the timing for canning in pint jars (since there is not a tested time for half-pints).
If you still want to make your recipe, I would suggest freezing it.
