Red Chile Sauce
Thank you for your question. Unfortunately it is difficult to answer this question without knowing more details on the recipe, proportions and elevation. For safety reasons and to prevent botulism, its critical to follow a tested recipe especially with low acid foods like peppers and onions. A couple reliable resources for recipes include OSU's website http://extension.oregonstate.edu/fch/food-preservation, Ball Blue Book or So Easy to Preserve, National Center for Home Food Preservation http://nchfp.uga.edu/ . In reviewing these resources I did not find a chile sauce recipe without tomatoes. I would suggest you contact your local Extension Office in Jackson County to speak with an educator there at 541-7767371 or http://extension.oregonstate.edu/sorec/. They have a strong Master Food Preserver Program there and could speak to you directly.
