How does one bake gluten/lactose free at high altitudes? My daughter has ulcerative colitis, and she misses breads, biscuits, etc, but things don't raise well here.

You may download the guide, also a fact sheet on Gluten-Free Baking and some millet recipes created by students. Basic adjustments at altitude will be the same, no matter if gluten free or not. However, sometimes it is useful to add additional structure to gluten free baked goods, such as ground chia or flax seeds,in order to compensate
for lack of gluten in the flour.
