Peaches are susceptible to winter damage in Kentucky. Although they can be pruned as early as late February, often people wait until later in the spring to prune, after the buds have started to produce shoots and flowers. It does no harm to wait until later to prune even after mild winters and if winter damage has occurred it is easier to evaluate and remove killed branches by pruning late.

Here is a publication from UK regarding growing peaches. http://www2.ca.uky.edu/agc/pubs/ho/ho57/ho57.pdf This publication is meant for large scale growers but would be applicable to home orchards as well.
