I have heard tell of family forest landowners from time to time, who have made maple syrup from Big Leaf Maple. I've tasted some local stuff, and it seems fine. Mild.
My understanding (hearsay at this point, because I could not direct you to a reference) is that the sap is not terribly concentrated (needing lots of sap and lots of boiling) and that the per tree production of sap is not huge either.
I have heard people talk about exploring commercial options, but none of it has gone anywhere, so far as I am aware.
