Sorghum Grass and horses

Can horses safely graze on winter stock ground that sorghum and soybeans were cut for hay

Sorghum's are susceptible to prussic acid after frost, and it is very toxic and can be fatal. I would be careful of this.
The beans were probably chemically defoliated to harvest, so would be leery of this as well. I would like to see the fields with a good winter cover crop of some sort- oats, rye, etc.
